For a logo-mp pizza pan ø 27 cm, smooth-edges

Dough: 375 grams flour – 5 grams yeast – 190 grams water – 40 grams olive oil – 7.5 grams salt

Tomato sauce: 500 grams tomatoes – 50 grams butter – 50 grams shallots – ½ clove garlic – salt – pepper – olive oil

Toppings: tomato sauce – ham – grated cheese – anchovies – mozzarella – olives – basil

Dough: Sieve the flour onto your work surface. Make a well in the middle. Pour the water with dissolved yeast, the oil and the salt into the well. Work the ingredients together until a smooth dough has formed. Cover with a tea towel and allow to rest for one hour.

Tomato sauce: Fry all ingredients in a little olive oil and simmer gently for a ½ hour. Add salt and pepper to taste.
Roll out the dough and place it on the buttered pan, cover with a layer of tomato sauce. Spread any other ingredients you wish on top and cover with grated cheese. Bake for 30 minutes in a 180°C oven, keeping an eye on it at all times.
